    ckunzelman The crisper texture tends to come more out of how long you cook it and at what heat, but the sesame oil definitely helps and more than that it makes it crispy with a texture that's a lot more similar to chicken or duck skin.

      ckunzelman (I found that cooking just in normal oil is fine, but the texture on the outside and how it tastes, no matter what, tends to be distinctly seitan-ish unless it is a longer cook, like chili)
